Buffalo Cauliflower

This a great recipe for a spicy twist on cauliflower. Not only is it a perfect touchdown snack for game days (that won’t completely throw off your goals in the gym), but it can be a tasty way to incorporate more fiber into your diet, or to get your kids to be more adventurous with veggies! It is simple and requires just a little bit of effort for big flavor, and is another way to change up your cauliflower. For your family or friends that enjoy some heat, this is a great recipe, but it might be a too spicy for kids, so feel free to cut back on the cayenne or substitute with a good quality GF free hot sauce they can handle instead. If you accidentally add too much spice, try drizzling your favorite dairy-free yogurt or ranch over the top to help cut the heat without compromising flavor!

INGREDIENTS
1 small or medium head of cauliflower
1 tbsp olive oil or melted ghee
1/4-1/2 tsp cayenne pepper
Pinch of salt

DIRECTIONS
Preheat oven to 400 degrees. Cut the cauliflower into florets that are all about the same size and rinse. Place a piece of parchment paper on a baking sheet and spread the cauliflower out evenly in one layer.   
Mix the olive oil and cayenne together and spread over the cauliflower. Sprinkle with salt and mix it up using your hands to ensure the cauliflower is coated evenly. Be sure to wash your hands well after this step and avoid touching your eyes.
Place in the oven for 25 minutes and serve once it has cooled slightly.
