Japanese Meatballs with Shishito Peppers
February 28, 2019

These chicken meatballs are a little burst of sunshine in your mouth.  Really easy to make, healthy and so flavorful.  I think they are the best chicken meatballs I have ever eaten and I am so happy to have found this recipe.  I used processor and chopped the chicken thighs myself.  But, I bet you could use the dark ground chicken.  The texture is a little different but I am sure they would probably taste as good.  This recipe will not disappoint.

Mexican Zucchini Succotash
February 28, 2019

Mexican Zucchini Succotash,  Here is  a recipe that will spice up your vegetables on Taco Tuesday.  The original recipe calls for a little corn.  But is it really is not needed.  But, if you use I would buy organic fresh or frozen.  This is little spicy delightful bite.  Just cook until vegetables are slightly tender.  You get a little snap and a little heat in each bite.  Yummm!

Korean beef stir fry with carrots, onions, and brown rice
Korean Beef Stir Fry
February 28, 2019

Are you craving a little of your favorite food from a Korean BBQ spot?  Then try this dish it is super simple and really flavorful.  It is best if you marinade overnight but at the very least marinate meat for an hour.  The original recipe calls for two teaspoons of brown sugar in the marinade.  I omitted but you can add if you like or use monk fruit sugar, brown sugar helps caramelize the meat. But it tastes just as good without it.    I also added broccoli to complete the meal and add a little more nutrients and fiber.  I also used grass fed NY strip but any tender cut will do.  Add some red peeper flakes for those of you that like to spice it up like me.
