This is a perfect dish for a warm summer night.  Crisp, refreshing with a healthy dose of protein and a little crunch.  You can serve it at your BBQ or use any left over chicken to make lunches.  Add some red pepper flakes if you like things a little spicy.  


8oz chicken cooked and shredded or cut into small cubes

1 cup cabbage shredded

1/2 cup red bell pepper, diced

2 green onions chopped

1 small tomato, diced

1/2 cup fresh cilantro, chopped

1/4 olive oil

1/2 tsp cumin

salt and pepper to taste


Combine the chicken, cabbage, bell pepper, onion, and tomato in a medium bowl.

In another bowl, whisk together the remaining ingredients to make dressing.  Pour the dressing over the salad and toss gently.  Refrigerate before serving.
