Who doesn’t enjoy a good pesto?! This summer-y twist is sure to taste delicious with grilled chicken, fresh meatballs, or on the side with some gluten-free pasta! This recipe is also a great way to add veggies to a picky eater's plate, or just keep things exciting in the kitchen.
INGREDIENTS
1 cup green peas
2 tbsp basil
2 tbsp mint
1 tbsp dill
1 stem green onion, roots removed
2 tbsp lime juice
Salt & pepper
2 tbsp extra virgin olive oil
DIRECTIONS
If peas are frozen, pull them out to thaw before starting.
In a food processor, combine the peas, basil, mint, dill, and green onion. Blend until roughly combined, scraping the sides of the food processor as needed.
Add in the lime juice, salt, and pepper. Continue to blend for another minute.
Slowly add the olive oil one table spoon at a time, until the mixture begins to smooth out.
Add on top of your favorite meats, use as a salad dressing, or enjoy as a tasty dipping sauce!
