Refreshing Watermelon and Jicama Salad

If you are going to the beach or you want a cold salad to add to your dinner and give you a reprieve from the heat of the summer sun.  Then try this dish because it is truly delish!  Your kids  may even eat some veggies without knowing it.  The lime with the sweetness of the watermelon is so refreshing. the cilantro kicks it up a notch and the crunch of the jicama make this a real winner.   Keep it cold until serving and watch your guest face when they indulge because you are sure to surprise them with the flavor!! This would even work as a desert but use mint rather than cilantro.  

INGREDIENTS 

1/4  cup fresh lime juice

1/4 cup of fresh squeezed orange juice

1 tsp lime zest

Kosher salt

1  small jicama, skinned and julienned about 2 cups

4 cups watermelon, cut in 1- or 2-inch pieces

1/3 cup roughly chopped fresh cilantro

DIRECTIONS

Place watermelon and jicama in bowl and pour in lime juice and orange juice and mix well.  Sprinkle with salt and add mint or cilantro.  Chill and then serve cold.
