Join Coach Madison in cooking Honey Garlic Chicken with veggies! This takes about 10 minutes to prep and 35 minutes in the oven! Only have 45 minutes? This recipe is perfect for you! Don't worry, if you aren't the biggest fan of vegetables this recipe will change your mind!

What you will need:

  • 1 1/2 Lbs. Chicken Breast
  • 2 Medium Sweet Potatoes
  • 3 Cups Broccoli
  • 3 Tablespoon Avocado Oil
  • 2 Tablespoon Coconut Oil
  • 2 Teaspoon Honey
  • 2 Teaspoon Brown Sugar
  • 1 Tablespoon Dijon Mustard
  • 3 Cloves Garlic
  • 1/2 Teaspoon Dried Basil
  • Salt and Pepper
  • Fresh Parsley for Garnish

Step 1

Preheat the oven to 400 degrees Farenheit. Add the first tablespoon of avocado oil to coat large pan. In a small bowl combine, Dijon Mustard, Brown Sugar, Garlic, Coconut Oil, Basil, Salt, and Pepper. Mix well.

Step 2

Set aside the Honey Garlic mixture. Add chopped Sweet Potatoes on a single layer across the pan. Next, add one tablespoon of Avocado Oil coating the sweet potatoes and topping with a sprinkle of salt and pepper.

Step 3

Add Chicken Breast on top of the sweet potato layer, adding the honey garlic mixture to coat the chicken breasts as well as the extras on the sweet potatoes.

Step 4

Add to the oven for 35 minutes. For the last 10 minutes of cook time, remove the pan from the oven and add the Broccoli. Turn the oven to broil for the last 2-3 minutes for a crispy touch! Finish with the fresh parsley garnish.
