These chicken meatballs are a little burst of sunshine in your mouth.  Really easy to make, healthy and so flavorful.  I think they are the best chicken meatballs I have ever eaten and I am so happy to have found this recipe.  I used processor and chopped the chicken thighs myself.  But, I bet you could use the dark ground chicken.  The texture is a little different but I am sure they would probably taste as good.  This recipe will not disappoint.

Classic Thai Red Curry

This is the easiest recipe and so delicious.  I think it is better than the yellow curry Thai dish.  You can add a little heat by adding a Thai chili or a sliced Serrano chili.  If you cannot find kaffir leaf (lime leaf) squeeze some lime juice into the dish.  Asian markets generally have but I have run into problems locating it in an Asian market.  Also Thai basil is best but you can use regular basil in a pinch if you cannot find it in an Asian market.

Swim suit season is upon us and what better way to celebrate than with a delicious light and flavorful dish.  This is a really healthy salad that is full of antioxidants.  This is great alone but paired with any protein and you have a knockout meal.  If you are cooking for your guy, pair it with a grilled bison or beef steak.   If you are cooking for your girl, pair it with some fish or chicken.  They will not complain that you have made a salad.  They will not even notice because the flavor is that good.   The dressing is a perfect balance of hot, sour, salty , and sweet and is bursting with flavor.

Spicy Chicken Lettuce Wraps

Feeling spicy? Try these chicken lettuce wraps. This recipe calls for one tablespoon chili garlic sauce but if you like a lot of heat add another tablespoon or two or even three if you are a real hot and spicy lover. I would recommend starting off with one and then add more chili sauce until you have reached your desired heat index. I use living lettuce rather than romaine because it seems to last longer if you are using for meal preparation and not dinner or lunch. Also, the sweet & sour sauce can be found at any specialty food market. It is gluten free, fat free and low in sodium. It would replace gluten-free Hoisin sauce.

This dish is packed with flavor and is a nice alternative to roasted pork tenderloin. I use pork tenderloin but any tender piece of pork will work. Cilantro goes really well with pork and the lime brightens the dish up. This recipe is from the ” The Paleo Cookbook” and will not disappoint.
