Once under the British Empire, India’s sovereignty was made official in 1947, largely due to the efforts of a humble and noble man: Mahatma Mohandas Gandhi. Gandhi inspired the immortal Martin Luther King, Jr. with his insistence on non-violence as a means of civil disobedience.

Thousands of passengers sat in the terminals, unsure if their flights would be further delayed, or canceled completely. In the pre-9/11 era, entire families would wait alongside the traveler to see their plane soar into the air. Dads, who wanted to sound funny to their children would mimic Tattoo from “Fantasy Island” as they shouted, “De plane! De plane!” Air Florida Flight 90 was among those planes.

It is said that “necessity is the mother of invention.” I’m unclear about the conditions that necessitated the invention of Baseball, but I’m grateful for it, nonetheless. Not everyone enjoys the game; it’s more conducive for a snooze than a foaming fan frenzy; there’s even an inning dedicated to stretching. Nevertheless, here I am, in Section 10FD, anxiously awaiting the first pitch. Before the steroid scandal, before the strike of ’94, it was a marvelous time to be a fan. Fernando Valenzuela struck out the side—looking up—Bo Jackson scaled the outfield wall like Spider-Man and Nolan Ryan snatched up Robin Ventura—twenty years his junior—in a headlock. The nostalgia is enough to bring a tear to my eye, but I must heed Tom Hank’s half-sober proclamation in “A League of Their Own:”

If you are looking for a way to add a lot of flavor to steaks, chops or fish Chimichurri sauce is an excellent choice.  You can use any leftovers on eggs or even as a marinade.  I use skirt steak or a sirloin flap because NY strips or Rib-eyes can stand alone pretty much.  When cooking skirt steak or a sirloin flap they cook fast about 3-6 minutes per side for medium rare.

If you are going to the beach or you want a cold salad to add to your dinner and give you a reprieve from the heat of the summer sun.  Then try this dish because it is truly delish!  Your kids  may even eat some veggies without knowing it.  The lime with the sweetness of the watermelon is so refreshing. the cilantro kicks it up a notch and the crunch of the jicama make this a real winner.   Keep it cold until serving and watch your guest face when they indulge because you are sure to surprise them with the flavor!! This would even work as a desert but use mint rather than cilantro.
