buffalo cauliflower with recipe
Buffalo Cauliflower
August 16, 2019

This a great recipe for a spicy twist on cauliflower.  It is simple with little effort and you have another way to change up your cauliflower.  Might be a too spicy for the kids but for those of you that like a little heat this is a great recipe.  Serve it with anything that you want to add a spicy element. You can also use a good quality GF free hot sauce instead of cayenne.

Korean beef stir fry
Korean Beef Stir Fry
February 28, 2019

Are you craving a little of your favorite food from a Korean BBQ spot?  Then try this dish it is super simple and really flavorful.  It is best if you marinade overnight but at the very least marinate meat for an hour.  The original recipe calls for two teaspoons of brown sugar in the marinade.  I omitted but you can add if you like or use monk fruit sugar, brown sugar helps caramelize the meat. But it tastes just as good without it.    I also added broccoli to complete the meal and add a little more nutrients and fiber.  I also used grass fed NY strip but any tender cut will do.  Add some red peeper flakes for those of you that like to spice it up like me.

Garlic Lemon Broccoli
January 1, 2019

This Garlic Lemon Broccoli dish is not any ordinary broccoli dish. It’s simplicity may be deceiving.   But try this and I promise the broccoli will disappear in minutes maybe even before it makes it to the table. Adds a delicious twist to one of our favorite vegetables and goes so well with any protein.  You can even add a little red pepper flakes if you like a little heat.

Spinach Mushroom Souffle
October 26, 2018

Want something that looks fancy to impress and tastes delish?  Try this spinach mushroom souffle.  This one has savory spinach and mushroom but you can use what you have on hand.  If it deflates after coming out of the oven it will still be delicious.  A nice healthy substitute for Yorkshire Pudding.  Never fails to impress!

Zucchini Noodles Aglio e Olio

This dish is tender, familiar, and comforting all in a huge bowl.  It can be slurped or twirled with your fork.  It could accompany any of your grilled proteins at a cook out and is abundant this time of year.  You can serve it with dinner for your guests but it is so comforting that you just may want to eat while in your pajamas as you lose yourself in a good book.

Healthy Vietnamese Chopped Salad
May 25, 2018

Swim suit season is upon us and what better way to celebrate than with a delicious light and flavorful dish.  This is a really healthy salad that is full of antioxidants.  This is great alone but paired with any protein and you have a knockout meal.  If you are cooking for your guy, pair it with a grilled bison or beef steak.   If you are cooking for your girl, pair it with some fish or chicken.  They will not complain that you have made a salad.  They will not even notice because the flavor is that good.   The dressing is a perfect balance of hot, sour, salty , and sweet and is bursting with flavor.

Roasted Cauliflower with Lemon Mustard Dressing
May 23, 2018

Roasting cauliflower is one of the best ways to prepare this non-starchy cruciferous vegetable. The brown bits are fought over by all. This dressing can be used with broccoli or green beans. You can also use this as part of an arugula salad.  A really yummy way to get your vegetables and fiber in your day.

Paleo Ratatouille
March 1, 2018

Ratatouille is a great side dish for any protein. You can make it a head of time and serve it with any of your proteins choices for the week. I use Japanese eggplant in this recipe because it does not have the bitter taste of Italian eggplant. This means you do not have to make it “weep” (sprinkle with salt and let it sit for an hour) before using to take bitterness out. Japanese eggplant is the long skinny type and most grocery stores will have it.
