These kebabs are a little different than your typical skewer with cubes of meat and veggies. Ground turkey is used to form an elongated meatball and then grilled. This can be served as an appetizer or as a main course. The spices make it so flavorful. You can use a fresh turkey breast and grind it in a food processor or just buy ground turkey.
1 1/2 pounds ground turkey
1 garlic clove minced or grated
2 Tbs olive oil
1/2 tsp cumin
1/2 tsp paprika
1/2 tsp kosher salt
1/4 tsp cinnamon
1/4 tsp cayenne pepper
2 Tbs finely chopped parsley
1 Tbs finely chopped mint
1 Tbs cold water
Soak wooden skewers in water for at least 30 minutes. Preheat grill on med-high heat. If you are using fresh turkey breast cut in strips and place in food processor and blend meat until meat is ground. Add spices, egg, one tablespoon olive oil, herbs and pulse until blended well. If you are using pre-ground turkey breast place in food processor with spices, herbs, water ,and one tablespoon of olive oil and pulse until blended.
Lightly grease your hands and form meatballs that are longer and more oval in shape than regular meatballs. Drizzle the meatballs with the other tablespoon of olive oil and slide the skewer through them. Place on grill and cook about 5-6 minutes per side. Do not over cook or they can be dry.
