Winter Pear Salad

While winter can often mean cold, wet weather that makes you crave a warm meal, here in Southern California the year-round warm weather makes winter salads just as appealing as a warm stew! This tasty dish utilizes seasonal ingredients and can be perfectly paired with just about any protein source, making for a diversely delicious meal!

INGREDIENTS
2 pears, thinly sliced
1 fennel bulb, thinly sliced
1/2 cup pomegranate arils
1/4 cup pistachios, shelled & chopped
4 cups mixed greens
1/4 cup extra virgin olive oil
1/4 cup balsamic vinegar
1/2 lemon, juiced

DIRECTIONS
In a large bowl, toss together the pears, fennel, pomegranate arils, pistachios, and mixed greens.
In a small bowl, mix the olive oil, balsamic vinegar, and lemon juice, stirring until combined.
Pour the dressing over the salad, and toss until evenly coasted (if meal prepping, keep the salad and dressing separate until ready to eat). Top with your favorite protein for a complete meal, or enjoy as a side or snack!
